Tex Mex Deviled Eggs

Last weekend I decided to take a shot at making my first batch of deviled eggs. I LOVE deviled eggs! If I'm at a restaurant and they are on the menu, I will most definitely order them. What I love most about them is all the different variations you can make! Deviled eggs are a perfect appetizer for a dinner party or when you need to take a dish over to a friend's house. They are really inexpensive to make and really impressive! The hardest/most time consuming part was peeling the boiled eggs, but other than that, super easy and fun!

Recipe

TEX MEX Deviled Eggs

Ingredients

6 hard-cooked eggs, peeled 

1 tablespoon diced green onions 

1 tablespoon chopped fresh cilantro 

1 small serrano or jalapeño pepper, seeded and finely chopped 

1/4 cup mayonnaise 1 teaspoon yellow mustard 1/2 teaspoon salt 

1/4 cup (1 oz.) shredded Cheddar cheese 

A couple dashes of hot sauce

 

Cut eggs in half crosswise; carefully remove yolks, and place in a small bowl.

 

Mash egg yolks; stir in green onions and next 5 ingredients.

 

Spoon mixture into a plastic bag. Cut a small hole and fill each egg with the mixture. Top off with jalapeño pepper and dash of hot sauce.
