Spring Green Salad with Herb Dressing
This time of year is my favorite for making pretty salads with lots of fresh ingredients that are perfect for light lunches with girlfriends. I really love a green salad with fresh herb dressing, simple deviled eggs and a sweet green smoothie on the side. It’s light, but flavorful, and leaves you feeling satisfied but not overly stuffed. If I could have this lunch every day, I would! This salad would also be a great addition to your Easter menu.
Ingredients
Salad
2 Heads of Butter lettuce
2 Sliced Avocados
1/2 Cup Sliced English Cucumber
4-5 Sliced Radish
1/4 Cup Thinly Sliced Red Onion
1/4 Cup Peas
Sliced Almonds for Topping
Dressing
1 Cup Whole Fat Greek Yogurt
1/4 Cup Olive Oil
1 Tablespoon Vinegar (I use champagne vinegar but any kind will do)
2 Cloves Finely Chopped Garlic
1/4 Cup Chopped Chives
1/4 Cup Chopped Parsley
1/8 Cup Chopped Tarragon
1/8 Cup Chopped Dill
Salt & Pepper to Taste
Instructions
Chop and combine all of the salad ingredients. Mix together the salad dressing and dress the salad right before serving. I love to pair this salad with simple deviled eggs using the same herbs that are in the salad dressing. This is a great deviled egg recipe that’s simple enough to combine with any herb mixture you have.
